"Nu m-am gândit că voi pleca acasă cu titlul Top Chef. Am venit aici cu ceva în cap, l-am făcut şi am fost apreciat. Cred că îl pun pe perete, o să-l păstrez toată viaţa! Nu voi uita niciodată experienţa asta", a declarat Giovanni Piselli, la finalul concursului.<br />

Marinati carnea si ficatul in pudra de curry, 1/2 din cantitatea de ghimbir, ardeiul iute tocat marunt, semintele de cardamom, usturoi si piper. </span></div>

<span lang="ET" style="font-family: Calibri, sans-serif; font-size: 11pt; line-height: 17px;">Prajiti la foc mediu, in uleiul de masline semintele, scortisoara si frunzele de dafin, pana se simte aroma semintelor, aproximativ 1 minut. Apoi se adauga ceapa si se caleste pana devide aurie. Se adauga carnea marinata, boia de ardei si se caleste putin, pana toata carnea a prins crusta maronie. Dupa ce s-a rumenit carnea se adauga carnatii si se prajeste inca 2-3 minute.</span></div>

Se asezoneaza cu sare si piper dupa gust.</span></div>

Pentru decor si textura am folosit felii de ridichie, ardei iute si coriandru proaspat.</span></div>

In a cincea editie Top Chef au avut loc mai multe momente-cheie: Joseph Hadad s-a enervat asa cum nu l-am mai vazut vreodata, concurentii au dat dovada de o imaginatie incredibila cand au gatit pentru... desene animate, au folosit cea mai scumpa carne din lume, iar duelul s-a dat in patru. Cat timp se face <strong>gratarul de pui</strong>, pune intr-o cratita putin ulei si pune ceapa tocata la calit. Adauga apoi ciupercile si sunculita afumata si lasa-le sa se caleasca alaturi de ceapa. Cand ceapa devine aurie, toarna vinul, pe care l-ai ales in functie de preferintele tale si, daca ti se pare prea aromat sosul, toarna si putina apa. Lasa sosul sa fiarba pana cand prinde o oarece consistenta. Potriveste-l apoi de sare si piper si adauga patrunjelul tocat. Mai lasa sosul pe foc maxim 3 minute dupa care da cratita la o parte. Scoate pulpele de pui din cuptor atunci cand esti sigura ca sunt facute bine si serveste-le alaturi de garnitura de ciuperci in sos de vin.</div>

1. Intr-o tigaie de teflon, prajeste ceapa rosie cu untul pana cand ceapa se inmoaie - cam 3 minute - apoi adauga merele si prajeste din nou pana cand se inmoaie si ele, cam inca 2 minute, amestecand bine.<br />
2. Adauga coniacul si lasa sa se aprinda, apoi adauga restul ingredientelor si amesteca bine pentru a combina toate aromele - cam 3 minute. Lasa sa se raceasca si pune deoparte.<br />
Pentru <em>friptura de mistret la cuptor:</em><br />
1. Incalzeste cuptorul.<br />
2. Pe o planseta de lucru curata, curata bucata de carne de mistret de grasimi sau alte tesuturi. Fa o taietura pe mijlocul bucatii de carne si desfa carnea ca un fluture. Aplatizeaz-o bine si aranjeaza umplutura de fructe in mijlocul bucatii. Ruleaza din nou carnea si leag-o bine cu ata in cateva locuri.<br />
3. Asezoneaza bine exteriorul cu sare, piper, pudra de piper si paprika.<br />
4. Incalzeste uleiul si untul intr-o tava de copt pe aragaz la flacara mare si apoi adauga carnea si oasele. Prajeste carnea pe toate partile timp de 8-9 minute.<br />
5. Micsoreaza flacara la moderat, adauga morcovii taiati rondele, ceapa taiat in optimi, frunza de dafin si usturoiul si continua sa prajesti timp de 5 minute, apoi impinge oasele si legumele sub friptura si presara cu verdeturi.<br />
6. Adauga vinul si supa in oala, da in clocot si apoi muta cu grija tava in cuptor la foc mediu spre mic.<br />
7. Lasa friptura sa se gateasca descoperita cam jumatate de ora, intorcand-o pe partea cealalta dupa 15 minute si las-o pana cand este prajita bine.<br />
8. Ia friptura din tava, acoper-o cu folie de aluminiu ca sa ramana calda si pune deoparte ca sa se odihneasca. Trece prin sita sosul din tava intr-o tigaie mica pentru sos, curata excesul de grasime de la suprafata si apoi da in clocot. Redu cantitatea la aproximativ o cana de sos.<br />
9. Intr-o alta tigaie, adauga otetul si zaharul si incalzeste la foc mediu pana se caramelizeaza, cam 1-2 minute.<br />
10. Incorporeaza sosul din tava in acest amestec, da in clocot si lasa sa fiarba la foc mic timp de 8 minute pentru a reduce si a se ingrosa. Incheie cu un pic de unt si verdeturi proaspat tocate.<br />
11. Feliaza <em>friptura de mistret la cuptor </em>pentru a scoate in evidenta umplutura uimitoare si presara sos din belsug.</div>

1. Intr-un bol mic, amesteca toate ingredientele cu exceptia curcanului si amesteca bine pentru a pregati marinata.<br /><br />2. Pune pieptul de pui intr-o punga mare, sigilabila, sau intr-o tava cu capac. Adauga marinata si lasa la frigider intre 30 de minute si 2 ore, intorcand curcanul din cand in cand.<br />
Pentru gratar: scurge bucatile de piept de curcan si pastreaza marinata. Incalzeste gratarul si pune bucatile de piept la foc mediu spre ridicat, cam 5-10 minute pe fiecare parte, ungandu-le din cand in cand cu marinata, pana cand s-au gatit.<br />
Pentru a coace la cuptor: incalzeste cuptorul si unge cu ulei o tava de copt, aranjeaza bucatile de piept si toarna marinata. Lasa sa se gateasca acoperit timp de 30-45 de minute pana sunt gata, indepartand capacul / folia in ultimele 10 minute pentru a capata o frumoasa culoare maronie.</div>

Pentru aceasta <strong>ciorba de burta</strong> avem nevoie de un stomac de vita sau de vitel mai mare.<br />
Daca stomacul este intreg, il vom taia pe jumatate, ca sa putem indeparta mai usor mucoasa din interiorul lui, cu sare.<br />
Pe urma il spalam bine (ca si stomacul de porc) ca sa ii dispara mirosul specific.<br />
Il scurgem de apa si presaram o lingurita cu varf de bicarbonat, cu care se freaca bine si il lasam pana a doua zi la rece.<br />
A doua zi il vom limpezi in 2 sau 3 ape reci pana ramane alb si fara miros.<br />
Acum putem sa il punem la fiert in 3 litri de apa rece, impreuna cu oasele de vitel si o lingurita de sare. Deoarece este format din musculatura tare, trebuie sa il lasam vreo 4 ore la fiert.<br />
Dupa ce au trecut 2 ore de cand am pus cratita pe foc, adaugam zarzavatul si ceapa taiata in patru.<br />
Lasam sa fiarba in continuare acoperite la foc mic, pana cand burta se inmoaie bine.<br />
Completam cu apa cand aceasta scade.<br />
Dupa ce s-a fiert burta, o scoatem din supa si o taiem in fasii de ½ cm pe lungime, iar acestea in bucatele lungi de 3 - 4 cm.<br />
Bucatile le punem in supa strecurata si completam cu apa cat dorim sa fie de groasa.<br />
Acum o lasam sa fiarba cateva clocote.<br />
Dupa aceasta faza, se ia de pe foc, se sareaza, se acreste dupa gust cu zeama de lamaie si adaugam o lingurita de vegeta.<br />
Apoi, o dregem fierbinte cu galbenus si smantana si se aromeaza cu frunzele mentionate, pe care le taiem marunt.<br />
Pentru aspect, punem deasupra cateva bucatele de unt si usturoiul tocat.<br />

<strong>Pasul 1:</strong><br />Fasolea se spala bine si se pune la inmuiat in apa calda timp de 20 de minute. Se pune la fiert in apa cu sare timp de o ora.<br /><strong>Pasul 2:</strong><br />Se adauga 2 cepe taiate marunt, ardeii taiati solzi si morcovul ras.<br /><strong>Pasul 3:</strong><br />In acest timp, afumatura se pune la fiert pana da in clocot o data. Acum se adauga si ea peste fasole. Se lasa cam 30 de minute la fiert.<br /><strong>Pasul 4:</strong><br />Separat, se face rantasul. Intr-o tigaie se pune putin ulei la incins. Se caleste o ceapa taiata marunt. Peste se adauga otetul si bulionul. Acest rantas se adauga in ciorba.<br /><strong>Pasul 5:</strong><br />Se mai lasa 10 minute la foc mic si se condimenteaza cu sare, piper si tarhon, dupa gust. La sfarsit, se adauga patrunjelul tocat.</div>

Aceasta va fierbe si ea putin mai mult, deoarece carnea de vita este una mai pretentioasa. Cand este gata insa, poti adauga tot zarzavatul tocat marunt, si sa continui fierberea pana cand toate ingredientele sunt gatite asa cum trebuie. Separat, pune la fiert borsul cu orezul, pana cand acesta se umfla bine. Cand este gata, adaugi peste supa de oase cu carne si zarzavat si mai dai de cateva ori in clocot. La sfarsit, potriveste ciorba cu carne de vacuta de sare si piper si pune verdeata!</div>

<strong>Pasul 1:</strong>Carnea de pui se spala bine, se taie cubulete si se pune la fiert in 2 l de apa cu sare. Se lasa cam 20 de minute, timp in care se spumeaza.<br /><strong>Pasul 2:</strong><br />Dupa 20 de minute se adauga legumele taiate: ceapa se taie julien, morcovul si telina se dau prin razatoare si ardeiul se taie fasii. Se lasa la fiert inca 20 de minute si se adauga cartofii taiati cubulete si orezul.<br /><strong>Pasul 3:</strong>Dupa 20 de minute se verifica daca toate legumele s-au fiert. Daca sunt fierte se adauga borsul incalzit si condimente, dupa gust.<br /><strong>Pasul 4:</strong>Smantana se bate bine cu galbenusurile. Ciorba se ia de pe foc si se drege cu smantana. Deasupra se presara leustean tocat.<br />
<strong>Ciorba de pui cu smantana</strong> se serveste calda alaturi de ardei iute si paine de cartofi.<br />
Cei care prefera mancarea mai acra pot adauga putin otet cand o servesc.</div>

Un lucru foarte important este ca la inceput sa speli varza cu apa. Astfel, varza va ramane doar atat cat trebuie de acra si nu va strica gustul sarmalelor. Dupa ce ai spalat varza, alege foile care iti permit sa le impachetezi in sarmale. Ai grija ca foile sa fie intregi, sa nu aiba gauri. Ce ramane din varza toaca marunt pentru ca vei avea nevoie.<br />
Pregateste acum carnea. Taie carnea in bucati mai mici pe care sa le dai prin masina de tocat. Cand ai terminat toata carnea, pune-o intr-un castron mare si amestec-o. Este mult mai bine daca faci <em>sarmalele</em> cu <em>varza</em> din carne de porc si carne de vita, decat dintr-un singur tip de carne. Adauga apoi orezul, ceapa tocata marunt, sare, piper, cimbru si, daca doresti, poti adauga si un ou. Amesteca foarte bine toata compozitia si incepi sa impachetezi sarmalele.<br />

Sarmale in foi de varza cu smantana si mamaliguta</h2>
Dupa ce ai impachetat toate sarmalele, incepi sa le asezi in cratita. Alege o cratita lata si pune putin ulei pe fund. Pune apoi un strat de varza tocata si bucatile de sunculita afumata. Aseaza apoi toate sarmalele, fara sa uti ca, din cand in cand, sa mai strecori si putina varza tocata. Cand ai terminat cu sarmalele, pune deasupra doua foi de varza intregi, astfel incat sa acoperi toata suprafata. Toarna apa cat sa depaseasca putin nivelul sarmalelor si cateva linguri de bulion sau suc de rosii. Da sarmalele la cuptor, verificand din cand in cand daca este cazul sa mai completezi apa.</div>

<strong>Pasul 1:</strong><br />Cartofii se curata de coaja, se taie cubulete si se pun la fiert in apa cu sare. Cand sunt fierti se scurg de zeama si se piseaza. E bine sa mai lasi putina zeama ca sa fie piureul mai moale. Cand zdrobesti cartofii adauga sare si margarina.<br /><strong>Pasul 2:</strong><br />Intr-o tigaie se pune putin ulei si se pune ceapa taiata marunt. Peste se adauga ardeiul gras taiat fasii, carnea amestecata, sare si piper. Se lasa la foc mic pana se inabuse carnea.<br /><strong>Pasul 3:</strong><br />Carnea racita se amesteca cu smantana, ouale crude, faina, mararul si rosiile curatate de coaja si tocate (sau bulionul). Deasupra se adauga condimente, dupa gust.<br /><strong>Pasul 4:</strong><br />Piureul se imparte in trei parti iar compozitia de carne in doua parti egale. Intr-o tava unsa cu ulei se pune un strat de piure urmat de unul de carne, un altul de piure altul de carne. Deasupra se mai pune un strat de piure.<br /><strong>Pasul 5:</strong><br />Se baga la cuptorul preincalzit pentru 25-30 de minute.</div>

<br /><br /><strong>Gogosi cu icre si castraveti murati</strong><br /><br />Prepara un aluat din: 300 ml apa, 150 ml ulei, 300 g faina, 5 oua si putina sare. Apa si uleiul se pun impreuna la fiert si apoi se adauga faina, in ploaie. Se lasa pe foc pana se formeaza un aluat tare. Cand s-a racit, se incorporeaza ouale pe rand si se amesteca bine. Din aluatul astfel obtinut se formeaza gogosele nu prea mari, care se coc in cuptorul incins in prealabil. Acestea vor fi goale pe dinauntru si se pot umple cu icre, dar si cu alte creme (de branza, maioneza cu ciuperci, pate) si se decoreaza cu masline sau castraveti murati.</div>

Pregateste de Craciun o friptura rumena de curcan.<br /><br /><strong>Curcan cu portocale, struguri si piure</strong><br /><br /><strong>Ingrediente:</strong> Un curcan de dimensiuni medii, 4 portocale, unt, ulei, condimente, struguri albi si rosii, cartofi pentru piure<br /><strong><br />Mod de preparare: </strong><br />- curcanul spalat si uscat se impaneaza cu felii de portcale si se unge cu un sos facut din: piper, chili, usturoi pisat, zeama de portocala, cardamon, cuisoare, scortisoara, nucsoara, sare, chimen.<br />- curcanul astfel impanat se pune la cuptor pentru doua ore, in cuptorul foarte incins<br />- cand este gata se serveste acompaniat de un sos facut din: unt, zeama de portocale si vin alb, alaturi de cativa struguri albi si rosii<br />- se poate servi si cu o garnitura din piure de cartofi dulci sau normali sau cu legume proaspete.</div>

<br /><br /><strong>Tort cu fructe exotice pentru Craciun</strong><br /><br />Ingrediente: 5 oua, un praf de sare, 5 linguri de zahar, 5 linguri de ulei, 5 linguri de faina, 1 praf de copt, 500 ml frisca lichida, gem de fructe, fructe exotice proaspete, gel fix.<br /><br /><strong>Mod de preparare:</strong><br /><br />- fa un pandispan delicios astfel: cele 5 albuse se bat cu praful de sare si apoi cu 5 linguri de zahar, pana devin o spuma consistenta. Se adauga 5 galbenusuri, 5 linguri de ulei, 5 linguri de faina si praful de copt, pe rand, amestecand usor cu o lingura de lemn, de jos in sus, pana se incorporeaza totul perfect.<br />- compozitia se pune intr-o tava speciala de tort, tapetata cu hartie de copt<br />- blatul trebuie sa stea la cuptor 35 de minute<br />- dupa ce s-a racit, blatul se taie in doua pe orizontala<br />- blatul se poate insiropa cu un suc facut din: apa, zahar, suc de portocale, vanilie<br />- se pune un strat fin de dulceata de fructe pe primul blat<br />- frisca lichida se bate dupa instructiunile de pe cutie<br />- se adauga frisca peste dulceata<br />- se acopera cu celalalt blat insiropat<br />- tortul se imbraca in frisca si se decoreaza cu fructe exotice: kiwi, portocale, banane, ananas, mango, etc.<br />- ca fructele sa-si pastreze textura si culoarea, se foloseste un Gel Fix din comert, dizolvat in apa calduta, care se toarna pe deasupra.</div>

Se pune si jumatate de cescuta de gelatina inmuiata in apa rece. Se amesteca bine cu telul pana compozitia capata consistenta aluatului de clatite, fara sa fiarba. Se ia de pe foc, se amesteca de cateva ori sa se mai raceasca si se adauga cutiile de branza Mascarpone. </span><br style="text-align: justify;" /><br style="text-align: justify;" /><span style="text-align: justify;">- in alt vas se bate toata cutia de frisca lichida, fara sa mai adaugi altceva, timp de 10 minute, pana se intareste foarte bine.</span><br style="text-align: justify;" /><br style="text-align: justify;" /><span style="text-align: justify;">- in frisca se incorporeaza crema de oua si branza treptat, amestecand cu grija de jos in sus, pentru a nu se lasa compozitia. </span><br style="text-align: justify;" /><br style="text-align: justify;" /><span style="text-align: justify;">- se adauga jumatate din crema peste piscoturile inmuiate in cafea si asezate in tava, apoi se mai pune un strat de Savoiardi cu aroma fina de cafea si ultima parte de crema.</span><br style="text-align: justify;" /><br style="text-align: justify;" /><span style="text-align: justify;">- pe deasupra se orneaza prajitura cu ciocolata rasa si se lasa la frigider 5 ore sau peste noapte.</span></div>
